Eggless Cornbread







Ingredients
  • 1 cup corn meal / flour
  • 1 cup wheat flour
  • salt to taste
  • 1 tsp green chili finely chopped or red chili powder
  • 2 tbsp finely chopped cilantro
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp brown sugar
  • 1 cup yellow sweet corn fresh or frozen
  • 1&1/4 cup milk
  • 1/4 cup plain yogurt
  • 3 tbsp olive oil
Method
  • Preheat oven to 375 F
  • Grease a large glass dish with a few drops of olive oil & keep aside.
  • In a large bowl mix together all dry ingredients.
  • Add the milk & keep mixing.
  • Add yogurt & mix well.
  • Then add sweet corn & mix again.
  • Finally add olive oil & mix well.
  • Pour this mixture into the greased dish.
  • Gently flatten with a knife & place in the oven.
  • Bake for about 25 to 30 min. until toothpick inserted comes out clean.
  • Cut into little squares & serve warm or cool with any soup or green chutney or sauce.

Coconut - Saffron Rice / Meetha chawal















Meetha Chawal........For people who like it sweet & the flavor of coconut !!!!!

Ingredients
  • 1 cup basmati rice cooked
  • 1 1/4 cup sugar
  • 1 cup fresh, grated coconut
  • 1/3 cup ghee
  • 1 tsp  kesar/saffron soaked in 1/2 cup warm water
  • 1/2 tsp powdered cardamom
  • 5-6 cloves
  • 1/4 cup raisins fried in 1 table spoon ghee
Method
  • Soak rice in water for about 15 minutes and then cook with 2 1/4 cup water. I cook it in microwave. It takes about 15 minutes.
  • Keep the rice aside, covered, for about 10 minutes. Then gently stir it to get the air out.
  • In a big pan, bring 3/4 cup water to boil.
  • Add sugar and coconut to the boiling water and cook on low heat for about 10 minutes until nice aroma emanates from the mixture.
  • Add Cooked rice to this mixture and add 1/3 cup ghee.
  • Mix well, and add saffron water and cardamom.
  • On low heat, cook the mixture for about 15 minutes stirring every 10-15 seconds.
  • By this time rice will have soaked all the sweet liquid.
  • Add raisins and cloves

Spicy green pulao















Spicy green pulao ........For people who like it spicy and hot !!!!!


Ingredients:

  • 1 cup Basmati rice
  • 1 cup Green Masala
  • 1 1/2 cup water
  • 3 tbsp vegetable oil or unsalted butter
  • 1 large onion sliced thin
  • 1/2 cup green peas
  • 1/2 cup green beans chopped
  • 1 tsp cumin seeds
  • 1 large bay leaf broken into smaller bits
  • 4-5 cloves
  • 3-4 cardamom pods split
  • 1"piece of cinnamon
  • 8-10 black peppercorns
  • Salt to taste
  • 2 tsp sugar

For Green Masala
  • 2 big bunches of coriander
  • 1 bunch of spinach
  • 1 large pod of garlic
  • 3" piece of fresh ginger
  • Green chillies to taste
  • 1stick of cinnamon
  • 1 tbsp poppy seeds
  • 4-5 cloves (optional)
  • Grind all the ingredients into a smooth paste. Add water only if required to facilitate grinding.

Method:

  • Wash the basmati rice well and keep aside to soak for 10 minutes.
  • Prepare 1 cup of the green masala as per instructions. Keep aside.
  • Heat the oil in a deep heavy-bottomed pan and add the cumin seeds. Cook till they stop spluttering. Add all the other whole spices and fry for a minute.
  • Add the onion and fry till soft.
  • Add green peas & chopped green beans & cook for 2-3 min.
  • Drain and add the rice and mix well.
  • Add the Green Masala, 1 1/2 cups of water, sugar and salt to taste. Mix well and bring to a boil.
  • Reduce the flame to a simmer, cover partially and cook till the rice is done.

Palak Paneer

 

 
Ingredients

  • 250 grams paneer
  • 2 bunches of palak (Spinach)
  • 3 medium sized onions finely chopped
  • 2 medium size tomatoes finely chopped OR tomato puree as per convenience
  • 2 green chillies finely chopped
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • ½ ginger paste
  • ½ garlic paste
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tsp sugar
  • 3 tbsp oil or butter
  • Salt to taste
  • Cream for garnish

 
Method

  •  Cook the palak (spinach) for about 5-10 minutes in boiling water and grind it to fine paste after it is cold. I usually cook the palak in the microwave for about 10-12 min by adding pinch of salt.
  •  Cut the paneer into small cubes and deep fry in oil till light golden brown
  •  Heat the oil in a Kadhai/non-stick pan and add the cumin seeds. Wait till it crackles and ensure that it does not burn.
  •  Add the chopped onions and green chillies and sauté till the onions are golden brown. Add the ginger garlic paste and sauté for another minute.
  • Add the turmeric powder, chilli powder and  and sauté for another 1-2 minutes.
  •  Then add the tomatoes/tomato puree and stir till the oil separates.
  •  Add the palak paste to this mixture.
  •  Add the paneer, garam masala, sugar and salt and cook till you start to see the gravy bubbling. If the gravy seems a bit dry, you can add some more water.
  •  Garnish with some cream in the end

Potato & Carrot Swirls





Ingredients
  • Pepperidge Farm Puff Pastry Sheets - 1 Sheet
  • 1 tbsp Sour cream
  • 1/4th cup grated Parmesan cheese
  • 1 small onion chopped
  • 1 tsp garlic powder
  • 2 big boiled & smashed potatoes
  • 2-3 big boiled & smashed carrot
  • salt to taste
  • 1/2 tsp black pepper
  • 2 tsp any melted butter
Method
  • Thaw pastry sheet at room temperature 40 min. or until easy to handle.
  • Heat oven to 400 F . Lightly grease 2 baking sheets or line with parchment paper.
  • In a medium bowl mix smashed potato & carrot, salt & pepper. Mix well. Keep aside.
  • In another small bowl Stir sour cream, Parmesan cheese, chopped onion & garlic powder. Mix well & keep aside.
  • Unfold pastry sheet on lightly floured surface. Brush with 1 tsp of butter.
  • Top with cheese - sour cream mixture  & potato - carrot mixture evenly.
  • Roll up pastry sheet like a jelly roll. Cut into 20(1/2") slices.
  • Place slices cut-side down on baking sheets. Brush with melted butter.
  • Bake 15min. or until golden.
  • Serve warm or at room temperature.

Apple Crumble















This receipt was quick & so easy that it was almost unbelievable. It was perfect for a cozy night :)

 Ingredients

  • 2 1/2 cups old-fashioned oats
  • 1 1/2 cups golden brown sugar
  • 1 cup all wheat flour
  • 1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
  • Nonstick vegetable oil spray
  • 4 pounds large Green or Gala apples, peeled, halved, cored, each half cut into 6 slices
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon ground cinnamon
  • 1 tsp ground nutmeg powder
  • Vanilla ice cream
Method
  • Mix oats, 1 cup sugar, and flour in bowl. Add butter; rub in with fingertips until topping comes together in moist clumps.
  • Preheat oven to 375°F. Spray  glass baking dish with nonstick spray.
  •  Mix apples, lemon juice, cinnamon, nutmeg powder and 1/2 cup brown sugar in bowl.
  • Transfer to dish. Sprinkle topping over.
  • Bake crumble until apples are tender and topping is brown and crisp, about 50-55 minutes.
  • Cool slightly. Spoon warm crumble into bowls.
  •  Serve with ice cream.
